Air Fryer Twice Baked Potatoes are a delectable side dish that combines the comforting flavors of creamy mashed potatoes with crispy turkey bacon and gooey melted cheese. Perfect for any occasion, from holiday dinners to casual family meals, these potatoes are easy to make in your air fryer and deliver a satisfying crunch with every bite.

  • 3 medium russet potatoes
  • 2 tbsp olive oil
  • Kosher salt (to taste)
  • 2 tbsp butter (softened)
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup sour cream
  • 2 slices cooked and crumbled turkey bacon (or 6 tbsp turkey bacon bits)
  • Chopped green onions (for garnish, optional)

Instructions

  1. Wash and dry the russet potatoes. Brush each with olive oil and sprinkle with salt. Poke several holes in each potato with a fork.
  2. Preheat the air fryer to 400ºF (204ºC) for at least 3 minutes.
  3. Place the potatoes in the air fryer basket and cook for 30 minutes, flipping halfway through until tender.
  4. Cool the potatoes for about 10 minutes, then halve each potato lengthwise and scoop out most of the flesh, leaving a thin layer.
  5. In a bowl, mash the scooped potato flesh with butter, pepper, garlic powder, onion powder, 1½ cups cheddar cheese, and sour cream until smooth.
  6. Fill potato skins with the mixture and top with remaining cheddar cheese and turkey bacon.
  7. Return to the air fryer for an additional 5-7 minutes or until cheese is melted.
  8. Serve hot, garnished with chopped green onions if desired.
