Apple crumble muffins are a delightful combination of tender, spiced apple muffins topped with a sweet brown sugar crumble. Perfect for breakfast or an afternoon snack, these muffins are bursting with flavor thanks to the addition of fresh apples and warm cinnamon.

  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup unsalted butter (melted)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup sour cream (or Greek yogurt)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup milk
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat oven to 400°F and line a muffin tin with paper liners.
  2. For the crumble, mix together flour, brown sugar, granulated sugar, and cinnamon in a bowl. Stir in melted butter until clumps form; set aside.
  3. In another bowl, whisk together flour (for muffins), baking powder, salt, and cinnamon.
  4. In a large bowl, beat together brown sugar, granulated sugar, and butter until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually add half the dry mixture then the milk; mix until combined. Fold in remaining flour mixture and diced apples.
  6. Divide batter into muffin cups, filling three-quarters full. Top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Cool briefly in the pan before transferring to a wire rack.
