  • ½ cup yellow onion (diced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 2 tablespoons flour
  • 1 tablespoon tomato paste
  • 2 cups cheddar cheese, shredded
  • ½ lb macaroni (2 cups)
  • 1 ½ cups beef broth
  • 8 oz tomato sauce
  • ½ cup half and half
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1 teaspoon ketchup
  • ½ beef bouillon cube
  • ¾ teaspoon dried oregano
  • ¾ teaspoon dried basil
  • ¾ teaspoon dried parsley

Instructions

  1. In a large measuring cup, combine the tomato sauce, beef broth, half and half, Worcestershire sauce, mustard, ketchup, and crumbled bouillon cube; set aside.
  2. Season ground beef with salt and pepper. In a skillet over medium-high heat, cook the beef until browned (about 5-6 minutes), then add onions and sauté until soft. Drain grease and set aside.
  3. Boil salted water in a separate pot; cook macaroni until al dente and drain.
  4. In the same skillet, melt butter over medium heat. Stir in garlic, flour, and tomato paste; cook for about 2 minutes.
  5. Gradually add the prepared sauce mixture while stirring continuously to avoid breaking the roux. Bring to a boil then reduce to simmer.
  6. While the sauce simmers, stir in shredded cheese until melted. Incorporate cooked beef and drained macaroni into the sauce; mix well.
  7. Serve hot, optionally topping with extra cheese before covering to melt.
