  • 2 large eggs
  • 1/2 cup vegetable oil (or melted and cooled butter)
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese mixture)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract (for cream cheese mixture)

Instructions

  1. Preheat the oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, combine pumpkin puree, granulated sugar, and brown sugar. Beat in eggs, vegetable oil, and vanilla extract. Gradually mix in the dry ingredients until smooth.
  4. In another bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla extract; mix until well combined.
  5. Fill muffin tins about three-quarters full with the pumpkin batter. Spoon about 1 tablespoon of cream cheese mixture on top of each muffin and swirl gently with a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean with a few moist crumbs. Allow cooling for 10 minutes before serving.
