  • ¼ tsp salt
  • ⅔ cup cold butter, cubed
  • Zest of 1 lemon (optional)
  • ⅓ cup light brown sugar
  • ⅓ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese
  • 8 oz cream cheese, softened
  • ½ cup + 2 tbsp caster sugar
  • 2 tbsp corn starch
  • 1 and ⅔ cups blueberries
  • ½ cup powdered sugar
  • 23 tsp milk

Instructions

  1. Preheat the oven to 350°F. Prepare a 9-inch springform pan by lining the bottom with parchment paper and spraying the sides with nonstick cooking spray.
  2. In a large bowl, mix flour, baking powder, salt, brown sugar, granulated sugar, and lemon zest.
  3. Incorporate the cold butter into the dry ingredients until crumbly; use your hands or a mixer.
  4. Add eggs and vanilla, mixing until just combined. The mixture should be crumbly yet cohesive.
  5. Press about two-thirds of the mixture into the bottom and up the sides (about 1½ inches high) of the prepared pan. Refrigerate the remaining crumbs.
  6. For the filling, blend cream cheese, mascarpone, vanilla, caster sugar, and corn starch until smooth. Add eggs one at a time—do not overmix.
  7. Pour half of the cheesecake mixture into the crust; sprinkle with two-thirds of blueberries. Top with remaining cheesecake mixture and blueberries followed by reserved crumbs.
  8. Bake for approximately 65–75 minutes or until golden brown; a toothpick inserted should come out clean. If browning too quickly, tent with foil.
  9. To prepare glaze: mix powdered sugar with milk until desired consistency is reached.
