Broccoli Salad with Turkey Bacon is a deliciously satisfying dish that combines crisp broccoli, savory turkey bacon, sweet cranberries, and crunchy sunflower seeds, all tossed in a zesty homemade dressing.   • 10 strips turkey bacon (cooked)
  • 2 heads broccoli (1.5 pounds, chopped)
  • 1 cup dried cranberries
  • 1/3 cup roasted salted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip or mayonnaise
  • Zest of 1 lemon and juice of 1 lemon
  • 2 tablespoons apple cider vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Bake turkey bacon at 400°F until crispy (about 15 minutes). Once cooked, cool and chop into bite-sized pieces.
  2. In a large bowl, whisk together Miracle Whip or mayonnaise, lemon zest, lemon juice, vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper to make the dressing.
  3. Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheese, red onion, and most of the turkey bacon (reserve some for garnish).
  4. Mix all ingredients until well combined. Chill for at least 20 minutes before serving or serve at room temperature.
  5. Store leftovers covered in the fridge for up to five days.
