  • 1 lb cooked and diced chicken tenderloins (or rotisserie chicken)
  • 1 can (14.5 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 small white onion, diced
  • 1 red bell pepper, diced
  • ½ packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • Juice of 1 lime
  • 2 tbsp diced green onions

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together the chicken, sour cream, lime juice, diced tomatoes, and taco seasoning. Fold in ½ cup of shredded cheddar cheese.
  3. Spray a 9×13 inch casserole dish with cooking spray. Layer the black beans, peppers, and onions at the bottom.
  4. Spread the chicken mixture evenly over the vegetables. Top with remaining cheddar cheese and garnish with green onions.
  5. Bake for 28-30 minutes until cheese is bubbly and golden brown.
