  • 16 oz cream cheese, softened
  • 1 large egg (room temperature)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Freeze half of the cookie dough for a few hours.
  3. Line a 13×9-inch pan with parchment paper or non-stick foil.
  4. Slice half of the frozen cookie dough into 1/4-inch slices and press them into the bottom of the prepared pan.
  5. Bake the crust for 10 minutes.
  6. In a bowl, beat together softened cream cheese, egg, sugar, and vanilla until smooth.
  7. Spread the cheesecake batter over the baked crust.
  8. Slice the remaining cookie dough and layer it on top of the cheesecake mixture.
  9. Bake for an additional 35-40 minutes until set.
  10. Cool completely before refrigerating for at least 2 hours before serving.
