  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil (plus more for grilling)
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro (plus more for serving)
  • 3 cloves garlic (minced)
  • Salt and freshly ground black pepper to taste
  • 1 1/2 medium avocados (diced)
  • 2 medium Roma tomatoes (chopped)
  • 1/2 cup chopped red onion (rinsed)
  • 1 clove garlic (minced)
  • 1 Tbsp fresh lime juice

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, whisk together lime zest, lime juice, olive oil, honey, cilantro, minced garlic, salt, and pepper. Marinate chicken breasts in this mixture for at least 15 minutes.
  3. While the chicken marinates, combine avocado, tomatoes, red onion, minced garlic, and lime juice in another bowl. Mix gently and set aside.
  4. Grill marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F).
  5. Serve grilled chicken topped with avocado salsa and additional cilantro as desired.
