  • 1 cup quinoa, uncooked
  • Pinch of salt
  • ½ cup fresh cilantro, with stems
  • 1 scallion, trimmed
  • 12 cloves garlic, crushed
  • ¼ cup plain unsweetened plant-based yogurt or extra virgin olive oil
  • Zest of 1 lime
  • Juice of 2 limes
  • ½ tsp coriander
  • 1 tbsp white apple cider vinegar
  • 1 tbsp maple syrup
  • 1 (15 oz) can white beans, rinsed and drained
  • ⅓ cup red onion, finely diced
  • ½ cucumber, deseeded and chopped

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions. Once cooked, fluff with a fork and let cool.
  2. In a food processor or blender, combine cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, coriander, vinegar, and maple syrup. Blend until smooth.
  3. In a large bowl, combine cooled quinoa, white beans, red onion, and cucumber. Toss gently to mix.
  4. Pour dressing over the salad and toss to coat evenly. Season with salt and pepper to taste.
  5. Serve immediately or chill in the fridge before serving.
