  • 1 1/2 cups cake flour
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup cold unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup packed brown sugar
  • 6 tbsp softened butter
  • 2 tbsp cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners' sugar

Instructions

  1. Preheat the oven to 400°F. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  2. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  3. Cream cubed butter until smooth; add granulated sugar and continue mixing. Incorporate eggs and vanilla extract.
  4. Gradually add dry ingredients until fully combined.
  5. On a floured surface, shape dough into a rectangle; spread the cinnamon filling evenly over it.
  6. Roll the dough tightly from one edge and cut into approximately 10–12 cookie balls (4.5 oz each).
  7. Bake for 9–11 minutes until edges are golden. Allow to cool on a rack.
  8. For frosting, blend cream cheese and butter; add powdered sugar, vanilla extract, and salt until smooth.
  9. Frost cooled cookies and sprinkle with additional cinnamon if desired.
