  • 1 packet active dry yeast
  • 3 tablespoons brown sugar
  • 2 tablespoons unsalted butter (melted)
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons baking soda
  • 1 1/2 cups warm water
  • Coarse salt for sprinkling
  • 2 tablespoons unsalted butter (melted, for brushing)

Instructions

  1. Warm the milk to 110ºF, then stir in the yeast and let sit for 3 minutes.
  2. Mix in melted butter and brown sugar.
  3. Gradually add flour and salt, kneading until smooth (10 minutes).
  4. Place dough in a greased bowl, cover, and let rise for 1 hour.
  5. Preheat oven to 400ºF.
  6. Mix warm water with baking soda in a bowl.
  7. Punch down the dough and divide into 12-16 pieces; roll into logs.
  8. Shape each log into pretzels and dip in baking soda water.
  9. Place on a greased baking sheet, sprinkle with coarse salt, and bake for 7-11 minutes until browned.
  10. Brush with melted butter while hot.
