  • 70g Brown Sugar
  • 70g Granulated Sugar
  • 115g Butter (melted)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 90g Butter (softened)
  • 90g Cream Cheese
  • 250g Icing Sugar

Instructions

  1. Preheat the oven to 175°C and line a baking tray with baking paper.
  2. In a bowl, whisk together brown sugar, granulated sugar, and melted butter until smooth.
  3. Add the egg and vanilla extract; whisk until well combined.
  4. Sift in plain flour, cornflour, baking soda, baking powder, and salt. Fold gently until just mixed.
  5. Roll dough into 50g balls and refrigerate for 1 hour.
  6. Space dough balls on the prepared tray and bake for 12 minutes or until lightly golden. Allow to cool completely.
  7. For the frosting, whip together softened butter, cream cheese, and icing sugar for about 5 minutes. Add vanilla extract and mix well.
  8. Optional: Add food coloring and mix until combined.
  9. Pipe frosting onto cooled cookies and add sprinkles if desired.
