  • 2 1/2 cups white whole wheat or all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 teaspoon kosher salt
  • 1 cup warm water or warm milk
  • 2 teaspoons honey
  • 7 tablespoons salted butter, at room temperature
  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a stand mixer bowl, combine flour, instant yeast, and salt. Add warm water or milk, honey, and 1 tablespoon butter. Knead on medium speed until smooth (1-2 minutes). Let rise covered in a warm place for 30 minutes to 1 hour.
  2. Preheat the oven to 375Β°F. Line a baking sheet with parchment paper.
  3. Mix granulated sugar with 1 teaspoon cinnamon in a bowl.
  4. Roll out the dough to a rectangle (ΒΌ inch thick). Spread with remaining butter and sprinkle with cinnamon sugar. Fold in half, cut into strips, twist each strip, and tie into loose knots on the baking sheet.
  5. Mix melted butter with remaining cinnamon and brown sugar; spoon over knots.
  6. Bake for 8-10 minutes, then spoon any melted brown sugar back over and bake for another 8-10 minutes until golden.
  7. For the glaze, beat powdered sugar, cream cheese, vanilla, and water until smooth. Drizzle over knots when cooled.
