  • 1 large onion (thinly sliced)
  • 1/4 cup olive oil
  • 3 garlic cloves (minced)
  • 1 1/2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 1 1/2 tsp salt
  • ½ tsp turmeric
  • ¼ tsp cinnamon
  • 1/2 tsp ground black pepper
  • 2 Tbsp lemon juice
  • 1 mini cucumber (sliced or cubed)
  • 2 small tomatoes (cubed)
  • 1 head romaine (sliced)
  • ½ small red onion (thinly sliced)
  • Pita bread
  • Tzatziki sauce (optional)

Instructions

  1. In a small bowl, mix olive oil, garlic, coriander, cumin, paprika, salt, turmeric, cinnamon, black pepper, and lemon juice to create the marinade.
  2. Combine chicken thighs and sliced onion in a large bowl; pour the marinade over them. Marinate for at least 30 minutes or overnight in the refrigerator.
  3. Preheat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes per side until fully cooked.
  4. While the chicken cooks, prepare the vegetables by slicing the cucumber, tomatoes, romaine, and red onion.
  5. Once cooked, slice the chicken and assemble by placing it in pita bread topped with veggies and tzatziki sauce if desired.
