  • 1 cup unsweetened almond milk (cold)
  • 6 (15 oz.) cans organic peach slices, drained
  • 1/2 cup unsalted butter (cold, cubed)
  • 1 Tbsp vanilla extract
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 375°F and lightly grease a 9×13 inch baking dish or cast iron skillet with butter.
  2. In a large bowl, mix flour, cane sugar, baking powder, and salt. Add cold almond milk and mix until just combined.
  3. In another bowl, combine drained peach slices with sugar and toss gently.
  4. Pour the peach mixture into the prepared baking dish.
  5. Drop spoonfuls of batter over the peaches; spread gently if needed.
  6. Bake for 55 minutes or until golden brown and bubbly.
