Fajita Chicken Kebabs are a vibrant and flavorful dish perfect for summer barbecues. Marinated in a zesty blend of lime and jalapeño, these grilled skewers combine tender chicken with colorful bell peppers and onions. Easy to prepare and packed with delicious spices, they make an ideal centerpiece for any outdoor gathering or family dinner.

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp canola oil
  • Zest and juice of 1 large lime
  • 1 tbsp chili powder
  • 1.5 tsp ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed for less spice)
  • 0.5 tsp kosher salt
  • 1 large red bell pepper, cut into chunks
  • 1 large green bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • Fresh cilantro for serving

Instructions

  1. Cut chicken into bite-sized pieces and place them in a zip-top bag.
  2. In a bowl, whisk canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken, seal the bag, and marinate for at least 30 minutes or overnight.
  3. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes.
  4. Thread marinated chicken and vegetables onto skewers.
  5. Lightly oil the grill and cook kebabs for about 6 to 8 minutes until chicken is cooked through, turning occasionally.
  6. Serve warm with cilantro and fresh lime juice; optional garnishes include salsa, sour cream, or guacamole.
