  • 8 large fresh peaches, peeled, pitted, and sliced
  • 1/3 cup organic brown sugar (plus more for topping)
  • 1/3 cup organic sugar (plus 4 tsp for topping)
  • 1 tsp lemon juice
  • 2 tsp cornstarch
  • 1/2 tsp cinnamon (plus 1 1/2 tsp for topping)
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter, cut into small pieces
  • 1/3 cup boiling water

Instructions

  1. Preheat the oven to 425°F.
  2. In a large mixing bowl, combine sliced peaches with brown sugar, sugar, cinnamon, cornstarch, lemon juice, and nutmeg. Stir until well coated and pour into an ungreased 9 x 13 baking dish.
  3. Bake peaches for 10 minutes.
  4. Meanwhile, in a medium bowl, whisk together flour, sugars, baking powder, and salt. Blend in butter until crumbly using a pastry blender.
  5. Gradually stir in boiling water until combined.
  6. Spoon the mixture over the baked peaches, spreading gently to cover them evenly.
  7. Mix remaining organic sugar and cinnamon together; sprinkle over cobbler.
  8. Bake for about 35 minutes or until the topping is golden brown.
  9. Serve warm with dairy-free vanilla ice cream.
