  • 1 tsp ground cinnamon
  • ⅛ tsp kosher salt
  • 4 tbsp unsalted butter (chilled, cut into small pieces)
  • 7 fresh peaches (skinned, pitted, sliced)
  • ¼ cup apple juice
  • 2 tbsp sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp all-purpose flour
  • ½ tbsp ground cinnamon
  • Non-stick cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 inch pan with butter or non-stick cooking spray.
  2. In a medium bowl, combine flour, brown sugar, white sugar, salt, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Refrigerate.
  3. In a large bowl, mix sliced peaches with apple juice, lemon juice, flour, cinnamon, and sugar. Pour into the prepared pan until about three-quarters full.
  4. Evenly distribute the crisp topping over the peach mixture.
  5. Bake for 40 minutes or until golden brown on top.
