2 tablespoons olive oil
2 medium zucchini, sliced
Salt and pepper, to taste
1.5 cups cooked corn kernels (about 3 ears of corn)
1 lb skinless, boneless chicken breasts, sliced
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/4 teaspoon salt
Freshly ground black pepper, to taste
5 cloves garlic, minced
2 tablespoons freshly squeezed lime juice
4 tablespoons butter, divided
1/2 cup fresh cilantro, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Add sliced zucchini and cook for about 3 minutes until slightly softened. Season with salt and pepper; remove from the skillet and set aside.
In the same skillet, add chicken slices seasoned with smoked paprika, chili powder, salt, and pepper. Cook for about 5-7 minutes until golden brown on both sides.
Add minced garlic and cook for another minute until fragrant.
Stir in the cooked corn and zucchini back into the skillet. Add lime juice and half of the butter (2 tablespoons), stirring to combine until well mixed.
Remove from heat and stir in remaining butter along with chopped cilantro before serving.
