  • 1 lb boneless, skinless chicken breast or thighs, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 8 oz lo mein noodles (or spaghetti)
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 cup sliced bell peppers
  • 1 cup shredded carrots
  • 1 cup snap peas or snow peas
  • 3 green onions, sliced
  • 1 tsp fresh ginger, grated (optional)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp brown sugar
  • 1/4 cup chicken broth or water
  • 1 tsp toasted sesame oil

Instructions

  1. Marinate the chicken with soy sauce, cornstarch, and sesame oil for 5–10 minutes.
  2. Cook lo mein noodles according to package directions; drain and toss with a bit of sesame oil.
  3. In a bowl, whisk together all sauce ingredients.
  4. Heat vegetable oil in a wok or large skillet over medium-high heat. Cook the marinated chicken until browned and cooked through; remove from the pan.
  5. In the same pan, sauté minced garlic (and ginger if using) until fragrant.
  6. Add bell peppers, carrots, and snap peas; stir-fry for 3–4 minutes until crisp-tender.
  7. Return the cooked chicken to the pan, pour in the sauce, and simmer for 1–2 minutes until slightly thickened.
  8. Toss in cooked noodles and sliced green onions; heat through and serve immediately.
