  • 1 package (9 oz) cheese tortellini
  • 1 lb chicken breast, cubed
  • 2 cups fresh broccoli florets
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 2 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to boil. Cook the tortellini according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Steam the broccoli florets for 3-4 minutes until bright green and crisp-tender. Plunge into ice water to stop cooking, then drain.
  3. Season the chicken cubes with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on all sides and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant but not browned. Slowly pour in heavy cream while whisking constantly.
  5. Remove from heat and gradually whisk in Parmesan cheese until smooth and creamy. Adjust seasoning with salt and pepper; if the sauce is too thick, add reserved pasta water gradually.
  6. Return the chicken to the skillet, add the cooked tortellini and steamed broccoli. Gently toss everything until well coated with sauce. Serve immediately with extra Parmesan cheese.
