Grilled Chicken Street Tacos are a vibrant and flavorful dish that brings the taste of authentic Mexican street food right to your kitchen.   • 1 1/2 lbs boneless skinless chicken thighs
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic, peeled and smashed
  • 2 tsp ground cumin
  • 1 1/2 tsp ancho chili powder
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste
  • 12 mini corn taco shells, warmed
  • 1 large avocado, sliced
  • 1 small red or yellow onion, chopped
  • Lime wedges for serving (optional)

Instructions

  1. Place the chicken in a gallon-size resealable bag. In a small bowl, whisk together lime juice, olive oil, garlic, cumin, chili powder, cilantro, salt (1 tsp), and pepper (3/4 tsp).
  2. Pour the marinade over the chicken in the bag, seal it while removing excess air, and massage the marinade into the chicken. Marinate in the refrigerator for at least 1 hour or up to 6 hours.
  3. Preheat the grill over medium-high heat (425 – 450 degrees F).
  4. Remove chicken from marinade and grill until fully cooked (165 degrees F internal temperature), about 5 – 6 minutes per side.
  5. Transfer grilled chicken to a plate, cover with foil, and let rest for 5 minutes.
  6. Dice the rested chicken into cubes. Assemble tacos by topping each warm tortilla with diced chicken, avocado slices, onions, and cilantro.
  7. Serve warm with optional lime juice spritzing and hot sauce drizzled on top.
