  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons chopped cilantro
  • 2 cloves crushed garlic
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 4 boneless chicken thigh fillets (skin removed)
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (washed and dried)
  • 2 avocados (sliced)
  • Extra cilantro for garnish
  • Sour cream (optional)

Instructions

  1. In a bowl, whisk together olive oil, lime juice, cilantro, garlic, brown sugar, red chili flakes, cumin, and salt. Reserve half for dressing.
  2. Marinate chicken thighs in the remaining mixture for at least two hours.
  3. Heat oil in a grill pan over medium-high heat; grill chicken until golden brown and cooked through. Rest before slicing.
  4. In the same pan, sauté sliced peppers and onion until tender.
  5. Assemble the salad with lettuce, avocado, grilled chicken strips, and sautéed vegetables. Drizzle with reserved marinade/dressing before serving.
