  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp fresh parsley (chopped)
  • 23 garlic cloves (pressed)
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least 1 hour. Preheat grill to medium heat (375°F).
  2. In a bowl, combine parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to create the marinade.
  3. Thread salmon and folded lemon slices onto two skewers per kebob for stability. Brush the skewers with the marinade.
  4. Oil the grill grates and place skewers on the grill. Cook for 3-4 minutes on each side until the salmon is opaque.
