  • 1 lb baby red potatoes
  • 2 ears corn (sliced into 1-inch disks)
  • 2 (4 oz) cajun-style andouille sausage links (sliced)
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter (diced)
  • 2 Tbsp fresh lemon juice
  • 2 tsp fresh thyme leaves (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp Old Bay seasoning (or to taste)
  • 2 Tbsp fresh parsley (chopped)

Instructions

  1. Preheat grill to medium-high heat (about 425°F). Cut eight sheets of heavy-duty aluminum foil measuring 12×14 inches. Use two sheets per packet.
  2. Microwave potatoes on high for 3 minutes total, rotating halfway. Allow to cool slightly before slicing.
  3. Divide potato slices among four double-lined foil sheets. Layer with corn, sausage, and shrimp.
  4. In a microwave-safe bowl, melt butter and mix in lemon juice, thyme, and garlic. Drizzle about 2 Tbsp of this mixture over each packet.
  5. Sprinkle Old Bay seasoning evenly across each packet. Seal by folding the foil sides over the filling and crimping edges tightly.
  6. Grill packets sealed side up for 12-15 minutes until potatoes are tender and shrimp is cooked through. Serve warm topped with parsley.
