  • 2 large egg whites (room temperature)
  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner's sugar
  • 2 tbsp milk
  • Purple gel food coloring
  • Black decorating frosting

Instructions

  1. Preheat the oven to 200°F and line a baking sheet with parchment paper.
  2. In a bowl, beat egg whites on low speed; gradually add cream of tartar and sugar while increasing the mixer to high until bright white and semi-stiff peaks form.
  3. Pipe meringue into mounds on the baking sheet and bake for 2 hours. Turn off the oven and let cool inside for an additional 30 minutes.
  4. For the buttercream, mix softened butter, confectioner's sugar, and milk until smooth. Add a drop of purple gel food coloring.
  5. Frost each cupcake with purple buttercream and pipe black eyes and mouths on the cooled meringue ghosts before placing them atop each cupcake.
