  • 12 Lotus biscoff biscuits
  • 150 g dark chocolate (melted)
  • 175 g unsalted baking spread or butter (softened)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tbsp milk
  • 150 g self-raising flour
  • 25 g cocoa powder
  • 115 g full-fat cream cheese
  • 165 g icing sugar
  • Green food coloring

Instructions

  1. Make the biscuit graves by snapping off one-third of each Biscoff biscuit, dip in melted dark chocolate, and let set on baking paper.
  2. Preheat the oven to 140C Fan/160C/325F/Gas Mark 3 and line a cupcake tin with cases.
  3. Beat together the baking spread and caster sugar until light and fluffy. Add eggs and milk, mixing well.
  4. Gently fold in self-raising flour, cocoa powder, and baking powder. Divide the batter among cupcake cases.
  5. Bake for 25-30 minutes until a skewer comes out clean. Cool completely.
  6. For the filling, mix cream cheese, icing sugar, and crushed Oreos until smooth; fill cooled cupcakes using a corer.
  7. Prepare chocolate buttercream by mixing softened butter, cocoa powder, icing sugar, and milk until smooth; pipe onto cupcakes.
  8. Decorate with biscuit graves, crushed Oreos for soil, and use green buttercream for grass.
