Halloween Slime Cupcakes are a spooky yet delightful treat perfect for your Halloween festivities.   • 175 g baking spread (or unsalted butter), softened
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g unsalted butter, softened
  • 400 g icing sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk
  • Green and yellow food coloring
  • 150 g tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with black cupcake cases.
  2. Beat together the baking spread and caster sugar until fluffy (about 5 minutes).
  3. Mix in the eggs and vanilla extract, followed by the self-raising flour.
  4. Stir in the black food coloring until well combined.
  5. Divide the mixture into the cupcake cases and bake for 25-30 minutes until a skewer comes out clean; cool completely on a rack.
  6. Once cooled, core the center of each cupcake and fill with green-tinted custard.
  7. For the buttercream, beat together softened butter and icing sugar until smooth; add vanilla, milk, and food colorings to achieve a bright green shade.
  8. Pipe or spread the buttercream onto cupcakes and decorate with candy eyes and sprinkles.
  9. Store in an airtight container for up to three days.
