Hawaiian Chicken Kebabs are a delightful fusion of sweet and savory flavors, perfect for summer grilling. Tender chicken pieces marinated in a tangy sauce are paired with juicy pineapple and vibrant bell peppers. These colorful skewers are not only visually appealing but also packed with flavor, making them an ideal option for barbecues or family dinners.

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
  • 1 3/4 lb boneless, skinless chicken breast (cubed)
  • 3 cups fresh cubed pineapple
  • 1 large green pepper (diced)
  • 1 large red onion (diced)

Instructions

  1. In a bowl, combine ketchup, brown sugar, soy sauce, pineapple juice, 2 Tbsp olive oil, rice vinegar, garlic, ginger, sesame oil, salt, and pepper. Mix well.
  2. Place chicken in a resealable bag and pour in most of the marinade (reserve 1/2 cup). Seal the bag and refrigerate for 1 hour while soaking wooden skewers in water.
  3. Preheat the grill to medium heat (400°F). Toss red onion, peppers, and pineapple with remaining olive oil; season with salt and pepper.
  4. Thread chicken and vegetables onto skewers alternately.
  5. Brush grill grates with olive oil and place skewers on the grill. Grill for about 5 minutes; brush with reserved marinade. Rotate skewers and brush again.
  6. Cook for another 4 minutes until the chicken reaches an internal temperature of 165°F. Serve warm.
