  • 3 tablespoons orange marmalade
  • 1 cup soy sauce

  • 12 skewers (soaked if wooden)
  • 1 purple onion, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1/2 fresh pineapple, cut into 1-inch pieces
  • Olive oil for grilling
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a gallon freezer bag, combine chicken breasts with chicken broth, orange marmalade, soy sauce, ginger, and garlic powder. Seal and marinate in the refrigerator for 2-4 hours.
  2. Preheat the grill to medium-high heat. Thread marinated chicken onto skewers, alternating with onion, bell pepper, and pineapple. Brush the grill grates lightly with olive oil.
  3. Grill skewers for about 8-10 minutes, turning occasionally until the chicken is fully cooked.
  4. Sprinkle with chopped cilantro before serving alongside rice or noodles if desired.
