  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt (2%)
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until well combined.
