  • ½ cup very cold heavy cream
  • 2 large eggs (1 egg + 1 yolk reserved)
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup
  • Pinch of kosher salt

Instructions

  1. Preheat oven to 375°F. Prepare a baking sheet lined with parchment paper.
  2. In a bowl, whisk together heavy cream, one egg, and one yolk; chill in the freezer.
  3. In a food processor, pulse flour, sugar, baking powder, chai spices, and salt. Add cold butter cubes and pulse until mixture resembles coarse crumbs.
  4. Gradually add the chilled cream mixture until dough forms; it should be slightly wet but not sticky.
  5. On a floured surface, shape dough into a disc and wrap in plastic; freeze for 30 minutes.
  6. Roll out dough to desired thickness and cut into wedges or strips.
  7. Brush scones with reserved egg white before baking for 20-22 minutes until golden brown.
  8. For glaze, whisk powdered sugar, chai spices, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  9. Dip the tops of warm scones into the glaze; let set before serving.
