  • 2 medium peaches (sliced)
  • 4 slices sourdough bread
  • 2 tablespoons ricotta cheese (optional)
  • 1 tablespoon honey
  • 4 slices white cheddar cheese
  • 2 tablespoons butter
  • 4 slices crispy turkey bacon
  • Fresh basil (for garnish)
  • Balsamic glaze (for drizzling)

Instructions

  1. Peel and slice the peaches, then set aside.
  2. Spread ricotta cheese on one side of each slice of bread. Layer sliced peaches on one slice and drizzle honey over them. Top with white cheddar on the other slice.
  3. Butter the outside of each sandwich. Heat a panini press or skillet over medium-low heat and cook sandwiches until the cheese melts and the bread is golden brown, about 5 minutes per side. Adjust heat if browning too quickly.
  4. If using turkey bacon, remove the top slice after melting cheese and add bacon before closing the sandwich again. Serve warm, garnished with fresh basil and drizzled with balsamic glaze.
