  • 1/4 cup warm milk (60 grams)
  • 1 1/3 cups warm water (315 grams)
  • 1 tablespoon instant yeast (12 grams)
  • 1.5 tablespoons sugar (22 grams)
  • 1 large egg (50 grams) + 1 egg for egg wash
  • 2 teaspoons salt (12 grams)
  • 4 1/4 cups all-purpose flour (530 grams)
  • 1/4 cup softened butter (55 grams)
  • Optional: sesame seeds for topping

Instructions

  1. In a large bowl or stand mixer, combine warm milk, warm water, instant yeast, sugar, egg, salt, flour, and softened butter. Mix until the dough comes together.
  2. Knead the dough on low speed for 5 minutes in a stand mixer or knead by hand on a floured surface for about 10 minutes until smooth and slightly sticky.
  3. Shape the dough into a ball and place it in an oiled bowl. Cover with a damp towel and let rise in a warm area for 30-45 minutes until doubled in size.
  4. Punch down the dough and divide it into 12 equal pieces. Shape each into a ball and place on a greased baking sheet. Cover and let rise for another 30-45 minutes.
  5. Preheat your oven to 425°F (220°C). Whisk together the remaining egg with water and brush over the buns; sprinkle with sesame seeds if desired.
  6. Bake for about 15 minutes or until golden brown.
