  • 2 cups raspberries (fresh or frozen)
  • 2 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar
  • 1/3 cup corn starch
  • 6 large eggs
  • 1/4 cup reduced raspberry puree
  • 3/4 cup lemon juice (freshly squeezed)

Instructions

  1. Prepare the raspberry puree by blending raspberries until smooth, then strain through a sifter to remove seeds. Reduce in a saucepan over low heat until thickened.
  2. Preheat oven to 325°F (160°C). Line a 9×13 inch baking pan with parchment paper.
  3. In a bowl, combine flour, sugar, corn starch, and salt. Mix in melted butter until thick. Press into the prepared pan and bake for 20-25 minutes until slightly golden.
  4. In another bowl, whisk together sugar, corn starch, eggs, reduced raspberry puree, and lemon juice until smooth. Pour over baked crust.
  5. Bake for an additional 20-25 minutes until set. Cool at room temperature for at least one hour before chilling in the fridge for two hours.
  6. Slice into bars and serve chilled.
