  • 4 1/4 cups all-purpose flour (530g)
  • 1 cup buttermilk, room temperature (240g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup unsalted butter, room temperature (113g)
  • 2 large eggs
  • 2 Tbsp fresh lemon zest
  • 2 cups powdered sugar (250g)
  • 1/4 cup fresh lemon juice (60g)

Instructions

  1. Preheat the oven to 200 F (95 C). In a large bowl, mix flour, yeast, poppy seeds, and salt.
  2. Heat buttermilk, sugar, and butter in the microwave until warm. Combine with dry ingredients and mix until a sticky dough forms.
  3. Add eggs one at a time, mixing until elastic. Incorporate lemon zest and additional flour as needed.
  4. Let the dough rest covered for 10-20 minutes.
  5. For the filling, combine sugars and lemon zest; blend in softened butter.
  6. Roll out the dough into a rectangle, spread filling on top, and roll tightly. Cut into 12 pieces using dental floss.
  7. Place rolls in a greased pan and let rise in the turned-off oven for 30 minutes.
  8. Preheat oven to 350 F (175 C) and bake for 28-32 minutes until golden brown.
  9. For icing, whisk powdered sugar, lemon juice, and melted butter together.
  10. Cool rolls slightly before drizzling with icing.
