  • 1 tablespoon olive oil
  • 14 oz kielbasa sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. In a large pot, heat olive oil over medium heat. Add kielbasa and cook for 4-5 minutes until browned. Set aside.
  2. Sauté minced garlic in the same pot for about 30 seconds.
  3. Add elbow macaroni, chicken broth, milk, smoked paprika, black pepper, and salt. Stir and bring to a gentle boil. Cover and simmer on medium-low for 8-10 minutes, stirring occasionally.
  4. Once pasta is tender and most liquid is absorbed, reduce heat to low. Stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return kielbasa to the pot and heat for another 1-2 minutes.
  6. Garnish with fresh parsley or green onions if desired.
