  • 2 large eggs
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 2 cups Japanese panko breadcrumbs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (218°C). Slice zucchinis into 3-inch lengths and 1/2-inch thick strips. In a bowl, mix beaten eggs with salt and black pepper. Line a baking sheet with parchment paper.
  2. On a plate, combine panko breadcrumbs and Parmesan cheese. Dip each zucchini strip into the egg mixture, shaking off excess. Coat in the panko mixture by pressing gently.
