  • 1/4 cup + 1 tbsp light brown sugar
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg

  • 2 tsp corn starch
  • 2 tsp water
  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare the Peach Filling: In a medium saucepan over medium heat, combine diced peaches, sugars, lemon juice, cinnamon, and nutmeg. Cook for about 6 minutes until bubbly. Mix corn starch and water in a small bowl; stir into the peach mixture and cook for another minute. Remove from heat, stir in vanilla, and cool in the fridge.
  2. Make Cookie Dough: Cream softened butter and sugars in a large bowl using an electric mixer. Add eggs and vanilla; mix until combined. Gradually add dry ingredients to form a dough. Chill the dough for at least 30 minutes.
  3. Preheat Oven: Preheat oven to 350°F (175°C). Scoop dough into balls (about 55 grams each) and chill again for at least three hours.
  4. Prepare Streusel: In a mixing bowl, melt butter and mix with remaining streusel ingredients until crumbly. Bake on a parchment-lined pan for 12-14 minutes until golden brown; cool.
  5. Bake Cookies: Roll chilled dough balls in cinnamon sugar before placing on cookie sheets lined with parchment paper. Bake for about 11-13 minutes until edges are set. Let cool slightly before transferring to wire racks.
  6. Assemble: Spoon peach filling into cooled cookies, sprinkle with streusel, and drizzle with glaze made from powdered sugar and milk.
