  • 1 egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour (for topping)
  • 3 tablespoons white sugar (for topping)
  • 1/2 teaspoon baking powder (for topping)
  • 1/2 teaspoon cinnamon (for topping)
  • 4 tablespoons cold unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together milk, egg, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Fold in 3/4 cup of chopped peaches.
