  • 110 g coconut oil
  • 170 g pumpkin puree
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp vanilla extract
  • 200 g all-purpose flour
  • 2 tsp baking powder
  • 3 tsp pumpkin spice
  • 100 g powdered sugar
  • 2 tbsp milk (as needed)
  • 2 tbsp maple syrup

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. Beat the eggs and sugar together until frothy. Stir in the oil, pumpkin puree, vanilla extract, and optional maple syrup.
  3. In a separate bowl, mix the dry ingredients. Gently fold into the wet mixture until just combined.
  4. Bake for 25 minutes, then cover with foil and bake for an additional 20 minutes. The cake should be moist; perform a toothpick test.
  5. Allow to cool. For the glaze, mix the powdered sugar with milk and maple syrup until smooth; adjust milk for desired consistency.
