  • 2 medium zucchini (cubed)
  • 4 fully cooked sausages (sliced into circles ¼-inch thick)
  • 1 onion (cut into ¾-inch pieces)
  • 1 bell pepper (any color, cut into ¾-inch pieces)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp minced garlic
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp black pepper
  • ½ tsp salt

Instructions

  1. Heat 1 tbsp of olive oil in a skillet over medium-high heat.
  2. Add the sliced sausage to the hot oil and sauté until browned (about 3-4 minutes). Remove from pan and set aside.
  3. In the same skillet, reduce heat to medium and add remaining oil along with zucchini, onion, and bell pepper. Sprinkle with oregano, garlic powder, basil, onion powder, black pepper, and salt. Stir well.
  4. Cook until the onion is translucent and vegetables are nearly tender (about 5 minutes).
  5. Return the sausage to the skillet along with minced garlic. Stir to combine and cover for a few minutes to heat through. Taste and adjust seasoning if needed.
