  • 2 small zucchini (sliced into thin half-moons)

  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (or 1 teaspoon dried thyme/oregano)
  • ¼ cup vegetable broth
  • Chopped fresh parsley (for garnish)
  • Grated parmesan (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and sauté for 3 to 4 minutes until fork-tender. Remove from skillet and set aside.
  3. In the same skillet, add remaining butter and melt over medium-high heat.
  4. Stir in diced onions; cook for about 2 minutes until softened.
  5. Add mushrooms; cook for 5 to 7 minutes until tender and browned, stirring occasionally.
  6. Add minced garlic and herbs; cook for an additional 20 seconds.
  7. Return zucchini to the skillet; mix with mushrooms and heat through for about 1 minute.
  8. Pour in vegetable broth; simmer for an additional 2 minutes.
  9. Adjust seasoning with salt and pepper as needed.
  10. Remove from heat; garnish with parsley and parmesan before serving.
