  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes (for garnish)
  • 1 cup butter (for sauce)
  • 1 cup brown sugar (for sauce)
  • ½ cup 35% cream
  • ¼ teaspoon kosher salt (for sauce)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 350°F. Lightly butter an 11 x 8-inch oven-safe dish.
  2. In a bowl, combine chopped dates and baking soda. Heat milk until scalding and pour over dates; let cool for about 15 minutes.
  3. In another bowl, mix flour, baking powder, and salt. In a food processor, combine eggs, brown sugar, butter, and vanilla; blend until smooth. Gradually add dry ingredients while mixing on low speed. Incorporate the soaked dates and liquid until smooth.
  4. Pour batter into the prepared dish and bake for approximately 30 minutes or until set with golden edges.
  5. While baking, prepare the caramel sauce: melt butter in a saucepan over medium heat, add sugar and salt until dissolved. Stir in cream and simmer for about 10 minutes until thickened.
  6. Once the pudding is baked, poke holes in it and pour about a third of the caramel sauce over the top. Let it soak for 15 minutes before serving.
  7. To serve, sprinkle with sea salt flakes, drizzle with more caramel sauce, and top with whipped cream.
