  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups chopped baby spinach (stems removed)
  • 1½ cups shredded Colby Jack cheese (or Mexican blend)
  • ½ cup salsa (store-bought or homemade)
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn or flour tortillas
  • Vegetable or canola oil (for frying)

Instructions

  1. In a saucepan, heat ½ inch of oil over medium heat until it reaches 350 degrees F.
  2. In a large bowl, combine shredded chicken, cream cheese, chopped spinach, Colby Jack cheese, salsa, sour cream, salt, and pepper.
  3. Place a few tablespoons of the filling mixture in the center of each tortilla. Roll up tightly and carefully place seam-side down in the hot oil. Fry for 2-3 minutes per side until golden brown. Remove and drain on paper towels.
  4. Repeat until all tortillas are filled and fried.
  5. Serve warm with toppings like shredded lettuce, chopped tomatoes, sour cream, or Pico de Gallo.
