  • 2 pounds boneless, skinless chicken breasts (cut into bite-size pieces)
  • Salt and pepper (to taste)
  • 8 cups romaine lettuce (chopped)
  • 2 romaine tomatoes (diced)
  • 1 cup corn kernels (fresh or frozen)
  • 4 green onions (sliced)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1/2 cup mild cheddar cheese (shredded)
  • 1/4 cup cilantro (chopped)
  • Juice of 1/2 lime
  • 1 cup tortilla chips (crushed)

Instructions

  1. Prepare the Tex-Mex dressing by whisking together ranch dressing and taco seasoning in a small bowl. Cover and refrigerate until ready to use.
  2. In a large non-stick skillet, cook chicken pieces over medium-high heat for about 12 minutes, seasoning with salt and pepper until fully cooked.
  3. In a large bowl, combine chopped romaine lettuce, diced tomatoes, corn, sliced green onions, rinsed black beans, shredded cheese, chopped cilantro, and lime juice.
  4. Allow the cooked chicken to cool slightly before adding it to the salad mixture. Drizzle in the dressing gradually and toss gently until everything is well combined.
  5. Serve immediately in individual bowls topped with crushed tortilla chips for added crunch.
