  • 2 pounds skinless, boneless chicken breast (sliced into 1 inch x 45 inches)
  • 2 teaspoons Masaman curry paste (or red curry paste)
  • 1/2 teaspoon turmeric powder
  • 1.5 tablespoons minced garlic
  • 2 tablespoons fish sauce
  • 1/3 cup coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons apple cider vinegar
  • Salt to taste

Instructions

  1. Slice the chicken against the grain into pieces measuring about 1 inch wide and 4-5 inches long. In a bowl, mix the chicken with Masaman curry paste, turmeric, minced garlic, fish sauce, and coconut milk until well coated. Marinate in the refrigerator for at least 30 minutes.
  2. In a saucepan, combine peanut butter, coconut milk, apple cider vinegar, sugar, and salt for the peanut sauce. Whisk together over low heat until combined and simmering; remove from heat.
  3. Preheat your grill or grill pan. Thread marinated chicken onto skewers and grill for about 4 minutes on each side or until fully cooked.
  4. Serve warm with the prepared peanut sauce and sliced cucumber.
