  • 28 oz can fire roasted crushed tomatoes
  • 15 oz can red kidney beans (drained and rinsed)
  • 15 oz can pinto beans (drained and rinsed)
  • 1 medium yellow onion (chopped)
  • 3 tablespoons tomato paste
  • 1½ teaspoons garlic (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Sauté the chopped onion for about 2 minutes until softened.
  2. Add ground beef, breaking it up as it cooks for approximately 5 minutes until browned. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Add chili powder, cumin, brown sugar, oregano, salt, pepper, and tomato paste; mix well.
  5. Pour in beef broth while scraping the bottom of the pot to release any stuck bits.
  6. Incorporate crushed tomatoes and both types of beans. Bring to a boil.
  7. Reduce heat to simmer gently for 1-2 hours, stirring occasionally. Cover initially; uncover during the last 30 minutes to thicken.
  8. Serve hot with desired toppings.
