  • 40 oz frozen peaches (2 bags)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tbsp cinnamon
  • ½ tsp nutmeg
  • 2 tsp cornstarch
  • 1 tsp cream of tartar
  • ½ stick unsalted butter (room temperature)
  • 2 tbsp water
  • 1 tsp fresh lemon juice
  • 2 cups all-purpose flour
  • ½ cup granulated sugar (for dough)
  • ½ cup brown sugar (for dough)
  • 2 tsp baking powder
  • 1 stick unsalted butter (cold)
  • ¼ cup boiling water
  • ½ tsp salt
  • 3 tbsp granulated sugar (for topping)

Instructions

  1. Preheat the oven to 375°F. Spray a 9×13 baking dish with non-stick spray.
  2. Combine frozen peaches, both sugars, vanilla and almond extracts, cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice in the baking dish. Mix well and cover with foil. Bake for 20 minutes.
  3. In a bowl, mix flour, sugars, baking powder, salt, and remaining cinnamon. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in boiling water until just combined to form a drop biscuit-like dough.
  5. Remove peaches from the oven and spoon dollops of dough over them. Leave space between blobs for cooking.
  6. Mix remaining sugar and cinnamon; sprinkle over the dough.
  7. Bake uncovered for an additional 30–45 minutes until golden brown. Enjoy!
